- 1 1/4 cups unsifted flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs
- 1 tablespoon vegetable oil
- 16 ounce can creamed corn
- 1 pound sausage, cooked per package instructions
To Make Corn Fritters and Sausage
- Combine flour, baking powder, and salt in large bowl.
- Beat together eggs, oil and corn in separate bowl.
- Add egg and corn mixture to flour mixture and mix until all ingredients are just combined.
- Place oil (1 inch deep) in skillet and heat over medium high heat.
- Drop by tablespoons into hot oil in skillet.
- Fry fritters on both sides until brown and cooked in center, about 5 minutes.
- Fritters will be flat and look like pancakes.
- Drain on absorbent paper towels.
- Makes 32 (2 inch) fritters.
- Serve with sausage and syrup.
