Cornmeal Yeast Bread Ingredients
- 4 1/2 tsp dry yeast
- 1/4 cup warm water
- 2 cups milk, scalded
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1/2 tsp sea salt
- 2 eggs, well beaten
- 1 1/3 cups yellow cornmeal
- 7 to 7 1/2 cups unbleached wheat flour
To make Cornmeal Yeast Bread
- Activate yeast in warm water and let stand 10 minutes.
- Add sugar, butter and salt to scalded milk. Cool to lukewarm. When mixture is lukewarm, beat in 3 cups of the flour, then beat in the eggs, cornmeal and activated yeast.
- Add remaining flour as needed to make a soft dough. Knead 10 minutes. Place dough in a greased bowl and cover with a damp cloth.
- Let dough rise in a warm place until double in bulk, about 1 1/2 hours.
- Punch down dough and shape into 3 loaves, place shaped Cornmeal Yeast Bread loaves in greased 9x5x3 inch pans.
- Cover pans and let raise in pans until light, about 30 minutes.
- Bake Cornmeal Yeast Bread in preheated 375° F. oven for 40 to 45 minutes.
