Recipe: Country White Yeast Bread

There is nothing quite like homemade bread. The aroma, and taste of a loaf of bread "right out of the oven" is special. Here's a recipe for a simple loaf of white bread. You can substitute 3 cups of whole wheat flour to make a semi-whole-wheat bread (That is 3 cups whole wheat flour and 3 1/2 cups bread flour in place of the 6 1/2 cups bread flour).
- 2 tbsp Red Star Yeast
- 1/2 cup sugar
- 2 eggs
- 6 to 6 1/2 cups bread flour (or substitute with some whole wheat flour as specified above mixing together well)
- 2 cups warm (105 - 115°F.) water.
- 1 tbsp salt
- 1/2 cup canola oil
- Softened butter
- Dissolve the Red Star Yeast in the warm water.
- Stir in 2 tbsp sugar and let sift for 10-15 minutes in a warm place to allow yeast time to activate.
- Meanwhile, combine the remaining sugar, salt, eggs, oil, and 3 cups of flour in a large mixing bowl.
- When yeast is ready, combine with the flour mixture and mix together until smooth.
- Slowly mix in the remaining flour to make the dough workable and easy to handle.
- Turn dough out of the mixing bowl and onto a lightly floured board; Knead about 8 - 10 minutes until smooth & elastic.
- Lightly grease a bowl, then turn the ball of dough into the bowl. Cover with a clean towel and put the bowl in a warm place (75-85° F.) until doubled (about 1 hour -- longer if temperature is cool).
- Turn dough back onto the freshly floured board, punch the dough down and divide in half.
- Roll each half of dough in a rectangle about 18 x 9 inches in size; roll up from the shorter side, pressing ends together with palm.
- Grease 2 loaf pans, and place dough seam side down into the pan.
- Brush dough with melted butted, then cover with clean cloth, place in a warm place until doubled, about 1 hour.
- Heat oven to 350° F.
- Brush top of loaf again with melted butter, then place plans in oven about 2 inches apart on lower racks near center [for more even temperature].
- Bake for 30-35 minutes or until top is deeply browned. Loafs should have a hollow sound when tapped.
- Remove loaves from pan, and place on a wire rack to cool. Brush once more with melted butter.
