Recipe: Cream of Carrot Soup

• 1 lb sliced, scraped carrots
• 1 cup chopped onion
• 1/8 tsp thyme
• 1/2 tsp salt
• 1/8 tsp white pepper
• 4 cups chicken stock
• 1/8 tsp tabasco
• 1 bay leaf

1. In a 2 qt saucepan, place carrots, onion, stock, bay leaf and thyme.
2. Cover. Cook until carrots are tender about 20 minutes
3. Remove bay leaf.
4. Place in a blender and puree.
5. Season with salt, pepper, and tabasco
6. Stir in cream. May be served hot or cold.
