2 heaping tbsp bacon grease
1 cup (scant) white corn meal
1 cup plus 2 tbsp flour
1 tsp salt
4 tsp baking powder
1/2 tsp baking soda
1 cup buttermilk
2 medium eggs
Melt bacon grease in 425° F oven in baking dish. Mix all other ingredients in mixing bowl. When grease is hot, add to other ingredients. Pour mixture back into baking dish. Bake at 425° for 20-30 minutes. (Bread will move away from sides of baking dish when done). Serves 4.
