English Muffins Ingredients
- 1/2 cup warm water
- 1 tbsp dry yeast
- 1 tbsp sugar
- 1 1/4 cups scalded milk
- 1 tbsp butter, softened
- 2 tsp salt
- 3 cups flour
- Cornmeal
To make English Muffins
- Dissolve yeast and sugar in warm water, let stand 10-15 minutes.
- Scald milk, add butter and salt.
- Let cool until lukewarm (85° F.).
- Combine yeast mixture, milk mixture and 2 cups flour in large bowl.
- Mix with electric mixer for 3 minutes on high speed. Scrape bowl.
- Stir in 1 cup flour with wooden spoon. cover with damp towel, let rise until double in size.
- Stir down and place on floured board.
- Work in a little flour with hands and then pat or roll out to 1/2" thick.
- Cut out with 2" cookie cutter.
- Place English Muffin dough on greased cookie sheet that has been sprinkled with cornmeal.
- Sprinkle top each English Muffin with a little cornmeal.
- Cover with damp towel, and let rise 30 minutes.
- Preheat electric frypan to 350° F.
- Cook English Muffins for 15 minutes then turn and cook 15 minutes. Do not cover the electric frypan.
- Let the English Muffins cool. Split with fork, do not cut with knife.
