2 cups milk
1/4 cup sugar
1 tbsp salt
1/4 cup butter
1 egg, beaten
1 tsp sugar
1/2 cup lukewarm (about 100 ° f)
1 tbsp active dry yeast
6 1/2 cups flour
Scald the milk.
Pour into a large mixing bowl, and add the sugar, salt, and butter.
Stir until butter melts.
Cool to lukewarm and add the beaten egg.
Combine the yeast with the 1/2 cup lukewarm water and 1 tsp sugar. Set aside for 10 minutes. Stir the yeat mix, and then add to the kilk mixture.
Beat in 1/2 of the flour and mix well.
Add the remaining flour and mix.
Turn the dough onto a floured bowl and knead for 8-10 minutes.
Shape into a ball, and place into a grease bowl, cover, and allow to rise until double.
Punch down, and divide into 3 portions.
Roll our each portion 1/4 inch thick.
Cut into 3 inch circles.
Place on cornmeal sprinkled baking sheet, brush tops with water and sprinkle with cornmeal.
Cover pan with wax paper, and allow to rise until doubled.
Cook on a hot ungreased griddle about 6 minutes per side.
