Recipe: Feather Rolls

Feather Rolls Ingredients
- 5 cups flour
- 2 1/2 tsp active dry yeast
- 1/2 cup cooked and mashed potatoes
- 1/3 cup canola oil
- 1 tsp sea salt
- 1/4 cup granlated sugar
To make Feather Rolls
- In mixer bowl combine 2 cups of the flour and the yeast.
- Combine potatoes, canola oil, granulated sugar, sea salt and 1 1/2 cups of warm water (110 degrees). Add to dry ingredients; beat at low speed with electric mixer for about 1/2 minute, scraping sides of bowl constantly.
- Beat 3 minutes at high speed.
- Stir in, by hand, the remaining flour.
- Cover, refrigerate for at least 2 hours or up to 3 days.
- Punch down; turn out onto a lightly floured surface. Cover; let rest 10 minutes.
- With lightly floured hands, shape into 24 buns.
- Place in greased 13x9x2 inch baking pan.
- Cover; let rise until almost double (40 minutes).
- Bake at 400° F. for 16-20 minutes.
