Hi, that's what I was going to say cut them up in slices and dip them into Carmel or make a chocolate fondue. You could also do an apple crisp, that would be good. The little girls are so cute. Cookie

I have put a good dent in the granny smiths but when I went to Jons Dads yesterday I picked about 1/2 a bushel of really nice red delicious. I had gone there to take him an apple pie and some apple sauce. I picked up another pack of the eggroll wrappers to make some more of the apple pie rolls for him. I took him 12 of those apple muffins about 3 days ago and he had eaten them all but one when I was there yesterday. His Dad is so good to share goodies with me. I try and cook part of what ever he gives me and take it back to him.
He asked me while I was there if I had picked any of his Kale. I said no. It is way to small to cut. I had noticed while I was getting basil something had cut a lot of it. Seems we have a hungry bunny. I love rabbits. I had one as a pet for years but when it comes to the garden I have no mercy. I told him to shoot the thing if he saw it out there.

I don't think I ever had Kale, I don't even know what it is. I Love Bunny's to but I was just saying they ate one of my hastas green plant in the yard. That's why I don't do a veggie garden any more just flowers.
I went to a small farmers market today got some veggies, and my first BIG PUMPKIN! I LOVE THE FALL.

They have a bunch of pumpkins down at Jons brothers. I asked Jons Dad who goes there everyday to feed their horses to bring me a couple of pumpkins to sit out on the balcony by the front door. Normally they dont want us putting anything on the balcony but I noticed a guy around the corner has pumpkins & mums sitting by his door and that colored corn hanging on his door. Its been out there for 2 weeks and they havent said anything to him so Im getting myself a pumpkin. Just watch..they will try and say something to me because our apartment is on the front of the building. They never want us putting anything outside because they dont want it to look like an apartment building from the front.
Kale is pretty yummy. I like it in soup.
Cannellini Bean Soup with Kale and Garlic-Olive Oil Crostini
1/4 cup extra-virgin olive oil, plus more for the bruschetta
6 to 8 cloves garlic, thinly sliced, plus 1 or 2 more whole cloves
2 teaspoons dried oregano
1 (6-ounce) can tomato paste
2 tablespoons red wine vinegar
2 (15-ounce) cans cannellini beans, drained and rinsed
2 quarts chicken stock, water, or a combination
Salt and freshly ground black pepper
1 large bunch kale, large ribs removed, chopped
1 baguette
Heat oil in a large pot. Add garlic and oregano and cook no more than a minute. Add tomato paste and vinegar, and cook another minute. Add beans and stock and bring to a simmer. Season with salt and pepper. Add kale and simmer, partially Covered, for 1 hour. Season, to taste, again with salt and pepper before serving. Slice baguette on a heavy angle to create long slices. Toast in a toaster or in the conventional oven. Rub once or twice with half a garlic clove. Season a shallow plate of extra-virgin olive oil with salt and dip each side of bread into the oil. Serve as accompaniment to the soup.

Italian Kale
INGREDIENTS:
1 bunch kale, stems removed and leaves coarsely chopped
1 clove garlic, minced
1 tablespoon olive oil
2 tablespoons balsamic vinegar
Salt and ground black pepper to taste
DIRECTIONS:
1.Cook the kale in a large, covered saucepan over medium-high heat until the leaves wilt. Once the volume of the kale is reduced by half, uncover and stir in the garlic, olive oil and vinegar. Cook while stirring for 2 more minutes. Add salt and pepper to taste.
Havent tried this one but will soon:
Hearty Portuguese Kale Soup
1 tablespoon olive oil
1 lb chorizo sausage (fresh not dried)
1 quart chicken broth
1 large onion, roughly diced
4 large potatoes, cubed
1 bunch kale, stemmed washed & chopped (abt. 1 lb.)
1 1/2 cups ditalini
1 (15 ounce) can dark red kidney beans
fresh ground black pepper
salt (optional)
Remove casing from sausage and cut into smaller than bit sized pieces.
Heat oil in a heavy soup pot; saute the sausage& onion just until the fat is rendered, about 3 to 5 minutes.
Drain on paper towels.
Add other ingredients except kale,& pasta.
Bring to boil and simmer 10 minutes.
Add kale, and pasta and simmer about 8 minutes until both are tender.
Taste for seasoning- depending on how spicy your sausage is, add salt and pepper to taste.
Serve piping hot.
