I will have to try that soda idea. Seems I never have buttermilk handy when I want pancakes. Of course, I can make it using vinegar or lemon juice, but that's never quite the same.

I love pancakes. Luckily I don't have the time to make them every morning, or i would be as big as a house.

I can't seem to make good pancakes. When I was in college, the recipe we used for pancakes there was just fabulous (I worked in the dorm cafeteria and often cooked). I took the recipe when I left, but I've since lost it. Boo.

Don't overmix the batter. Works for me. The Club Soda and buttermilk are excellent to incorporate too. Overmixing renders those puppies rubbery! There should be some lumps in the batter. Not a lot, but a few small ones. :)
