Well it's good to know that most oils aren't diluted as I have been told. Yea Im in Springfield Illinois. I have actually been to Bloomington several times at an old job I worked at. An EVOO is probably best for what I'm looking for since I wanted to use it to dip different breads in as a better alternative than everyone snacking on cookies and chips. Anyone know any good recipes for a nice olive oil dipping sauce? At an old restaurant I worked at we used to mix a certain type of cheese with it but I can't remember what it was.

1/4 cup freshly grated pecorino romano cheese
1 tsp. red pepper flakes
4 oz. pure extra virgin olive oil
1/2 tbsp. freshly chopped garlic
Mix it all together in a bowl and serve.
It is suggested to use it the same day you make it, since it tastes best fresh.

1 tablespoon crushed red pepper
1 tablespoon black pepper
1 tablespoon dried oregano
1 tablespoon dried rosemary
1 tablespoon dried basil
1 tablespoon dried parsley
1 tablespoon garlic powder
1 tablespoon minced garlic
1 teaspoon salt

Place all ingredients in grinder and grind evenly if you like - if not, mix well.

Store airtight.
