The Nieman Marcus Cookie

2 cups butter
4 cups flour
2 tsp. baking soda
2 cups granulated sugar
2 cups brown sugar
5 cups blended oatmeal (measure oatmeal and blend in blender to a fine powder)
24 oz. chocolate chips
1 tsp. salt
1 8 oz. Hershey bar (grated)
4 eggs
2 tsp. baking powder
3 cups chopped nuts (your choice)
2 tsp. vanilla

Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey bar and nuts. Roll into balls and place two inches apart on a cookie sheet..Bake for 10 minutes at 375 degrees. Makes 112 cookies.

Orange Poppy Seed Cookies

2/3 cup of sugar
1/2 cup of butter, room temperature
1 egg, room temperature
1 tablespoon of orange zest
1 1/4 cup of flour
1/2 teaspoon of baking soda
Pinch of salt
1 tablespoon of poppy seeds

1 Beat together the butter and sugar until light and fluffy, about 3 minutes.
2 Add the egg and the orange zest, beat for thirty seconds, scraping down the bowl part way through to ensure even mixing.
3 In a separate bowl, mix together the flour, baking soda, and salt. Slowly sift it into the butter mixture until just combined. Fold in the poppy seeds.
4 Place heaping teaspoonfuls on a baking sheet lined with parchment paper or Silpat, allowing them space as they will spread as they bake.
5 Bake at 350°F for 10-12 minutes or until just turning golden around the edges. Remove from oven. Let sit on the baking sheet for a minute or two to let the cookies solidify a bit, then transfer them to a wire rack to cool completely.
Makes 3 1/2 dozen cookies.

Amish Cookies

1 teaspoon baking soda
4 1/2 cups all-purpose flour
3/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract
2 egg(s)
1 cup confectioner's sugar
1 cup sugar
1 cup butter ; softened
1 cup vegetable oil

Preparation:

Preheat the oven to 375F (190C). Lightly grease a cookie sheet. Mix together sugar, butter, confectioner's sugar, oil and butter in a large bowl until smooth. Beat in the eggs, one at a time, and then the vanilla. In a separate bowl, combine the flour, cream of tartar and baking soda. Stir flour mixture into the sugar mixture until combined. Drop by the teaspoonful onto the cookie sheet. Bake for 8 to 10 minutes or until bottoms are lightly browned. Remove from sheet and cool on a wire rack.

Boiled Raisin Cookies Recipe


1 cup water
2 cups raisins
1 cup margarine
2 cups sugar
3 eggs
1 teaspoon vanilla
4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon allspice

Boil raisins in water for 5 minutes.
Cream margerine, add sugar, cream well.
Beat eggs until light and fluffy.
Add vanilla and raisins (with water).
Add dry ingredients.
One cup of chopped nuts can be added at this time.
Drop by tea spoons onto a greased cookie sheet.
Bake 350 for 15 minutes depending on size of cookies.

Walnut Clusters

1/2 C. sifted all-purpose flour
1/4 t. baking powder
1/2 t. salt
1/4 C. soft butter
1/2 C. sugar
1 egg
1 1/2 t. vanilla
1 1/2 squares unsweetened chocolate, melted
2 C. chopped nuts

Sift flour, baking powder and salt. Cream butter and sugar. Add egg and vanilla, using electric mixer. Add chocolate, flour mixture and nuts. Mix thoroughly.

Drop by teaspoonfuls, one inch apart, on a greased cookie sheet. Bake in a preheated 350° F. oven for 12 minutes.

Yield: 2 1/2 dozen cookies.
