baked roux is good - preheat your oven to 400
place about 1 c. flour in an oven proof pan, pour over 1/2 cup oil and mix well
bake and stir it every 15 minutes until a nice caramel color

oops - almost forgot - cool completely and store in fridge - freezes well

Americas test Kitchen or Cooks Country did a recent Gumbo show. They baked their roux. Started it on the stove top and then into the oven to brown. Gumbo - Video | Cook’s Country - Recipes That Work . No stirring or worrying about it getting to dark or burning.

Thanks Mama. She actually toasted that flour in a Dutch oven on the stove top then added the oil, made a roux and baked that for 45 minutes in the oven. That was a very interesting recipe.
