Hi Annie - I had the same concern before I tried making this the first time and so I added a small amount of geletin - the considtancy of the filling was similar to soft truck tires. Without the geletin it's a bit loose unless you leave it overnight - then it sets up nicely. I also found that adding a couple of drops of red food coloring did wonders for the color of the finished product.
Hope this works for everyone - when my cat wanted to lick the bowl after I was through making the pies I warned him that he wouldn't like it - a bit too sour for a cat's tender taste. But he would have it and after I finally put the plate down for him he left only the pattern on the bottom - and then walked around the room, with his little face screwed up in a pinch. It was too funny!:D
