Greg - did you ever make your own sausage?? I love to and this one of the Kielbasa recipes I have:


Kielbasa


1 pound ground pork
8 ounces lean ground beef
2 teaspoons minced garlic
1 teaspoon freshly ground black pepper
1 tablespoon salt
1 tablespoon brown sugar
1/2 teaspoon ground allspice
1 teaspoon fresh marjoram
1/2 teaspoon liquid smoke flavoring
12 sausage casings


In a large bowl, combine pork, beef and garlic. In a separate bowl, stir together black pepper, salt, brown sugar, ground allspice, marjoram and liquid smoke. Combine mixtures and knead with hands to combine.

Fill casings with meat mixture and refrigerate overnight. Boil or grill before serving.

If preferred - form into patties.

I usually combine the ingredients and refrigerate overnight before I fill casings or shape into patties. To me - they taste better!

Mexican Chicken Casserole

3 chicken breasts
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel (canned tomatoes with chiles)
1 cup shredded Cheddar cheese
1 cup crushed Fritos

Cook and chop chicken. Add soups, Rotel, cheese and chips. Pour into casserole dish and bake at 350 for 20 minutes.

You can substitute torn corn tortillas for the Fritos if you want it a little less unhealthy. Also I always use the 98% fat free soups.

Thank you so much for all the recipes! I think I like the baked potatoe and the firehouse one the most. My husband loves spicy foods. And that looks pretty quick. Well they all look quick. Thanks

Crispy Chicken Casserole
(this is a big favorite around our house)

4 Boneless Chicken breasts
2 Lg cans cream of mushroom soup
2 Lg cans cream of chicken soup
1 Lg tub of sour cream
1 box of Ritz crackers
1/2 cup melted butter
1 Lg onion

Boil chicken breast until done and then dice into cubes.

On stove top, mix cream of mushroom soup, cream of chicken soup and sour cream. Chop onion and add into mixture. Cook for 5 minutes and then add the chicken. Set aside.

Crumble 2 packs of Ritz crackers and put in bottom of casserole dish. Add half of the butter, this will make your bottom crust. Add the above mixture on top of ritz crackers. For top layer, crumble 2 packs of Ritz crackers on top and drizzle remaining butter on top. Cook in oven until Ritz crackers on top are golden brown.( about 30 minutes

Bruschetta Chicken Bake

1 can (14-1/2 oz.) diced tomatoes, undrained
2 cloves garlic, minced
1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
1/2 cup water
1-1/2 lb. boneless skinless chicken breasts, cut into bite-sized pieces
1 tsp. dried basil leaves
1 cup Kraft Shredded Mozzarella Cheese

Preheat oven to 400 F. Place tomatoes with liquid in medium bowl. Add garlic, stuffing mix and water; stir just until stuffing mix is moistened. Set aside. Place chicken in 13x9 inch baking dish; sprinkle with basil and cheese. Top with stuffing mixture. Bake 30 min. or until chicken is cooked through.
