I like Cooking light mag. I also like Martha Stewart little mag. Here is a recipe, for ya to check out:

Orange - glazed chicken with carrots and bulgur

8 Chicken drumsticks
coarse salt & pepper
1/2 cup Orange Marmalade
1 Tbs. Olive Oil
4 Med. carrots 1/2 inch chunks
1 cup of bulgur
1 tsp. grated lime zest plus 1tsp, fresh lime juice

* PREHEAT OVEN 450 SALT & PEPPER CHICKEN ROAST 10 MIN. BRUSH W/ HALF MARMALADE (CONTINUE TO ROAST) BRUSHING 1 MORE TIME W/ MARMALADE UNTIL CHICKEN IS BROWN 10-15 MIN MORE. HEAT OIL IN LG. SAUCE PAN OVER MED. HEAT. ADD CARROTS SEASON S/P ADD BULGAR SERVE WITH CHICKEN.


I haven't made this yet but I have lite Marmalade, and thought this sounded Good. Cookie :)

Here is another Chicken recipe I'm going to try...

Chicken Skewers


Cook 2 boneless skinless chicken breast ( 6 - 8 0z. each) vegetable oil for frying pan. (Cut into chunk- strips)
1 t toasted sesame oil
1 tsp. soy sauce
1 garlic clove, minced
1/2 tsp. red pepper flakes ( IN A BOWL TOSS ALL INGREDIANTS WITH CHICKEN)

Dipping Sauce:
1/4 cup peanut butter 2 Tbs. Rice vinegar Coarse s/p

*I just bought some red pepper flakes thought this sounded Good... give it a try Cookie:)
