Smooth Melting - No Need for Tempering - Quick Setting - Microwavable
Melting Directions:
Melt Ghirardelli candy making and dipping wafers carefully. Be sure all containers and utensils are dry.
Microwave Method:
- Place 2 cups Ghirardelli candy making and dipping wafers in microwave safe container.
- Microwave at half power or defrost setting for 30 seconds.
- Stir thoroughly (product keeps its original shape until stirred).
- If not completely melted, continue to microwave at 15 second intervals and stir until smooth. (over heating will cause wafers to burn).
Stove Top Method:
- Place desired amount of Ghirardelli candy making and digpping wafers in top pan of a double boiler over low heat.
- Stir constantly until smooth and melted.
- Do not allow water to boil.
For use in Chocolate Fountains:
- Add 1 tablespoon vegetable oil for 2 pounds of Ghirardelli candy making and dipping wafers.
- Melt Ghirardelli candy making and dipping wafers.
Dessert Cups
- 4 cups Ghirardelli White candy making and dipping wafers
- 8 small, round ballons
- In a double boiler over hot water, melt 2 cups of Ghirardelli White candy making and dipping wafers.
- Cool approximately 5 minutes.
- Inflate balloons to 4 inch diameter and knot.
- Holding balloons by knot, dip into melted Ghirardelli White candy making and dipping wafers, tipping to cover balloon halfway up balloons.
- Place dipped balloons, knotted side up, on wax paper lined baking sheet, holding balloons in place until it starts to set.
- Place balloons in freezer 5 minutes.
- Melt remaining 2 cups of Ghirardelli White candy making and dipping wafers and repeat above dipping procedure.
- Place balloons in freezer for 10 minutes.
- Remove balloons from freezer and snip hole in each balloon to deflate balloon.
- Carefully peel balloon away from chocolate.
Variation: Before dipping, swirl in dark chocolate.
Dipped Stawberries
- 1 basket large strawberries with stems, cleaned and dried
- 1 cup Ghirardelli White candy making and dipping wafers
- Melt Ghirardelli White candy making and dipping wafers using above desired melting directions.
- Hold each stawberry by stem and dip strawberries completely.
- Place coated strawberries on waxed paper.
- Cool in refrigerator for 10-15 minutes, or until chocolate is hard.
Variation: Before dipping, swirl in dark chocolate.
Almond Bark
- 3/4 cup plain or roasted almonds (whole or halves)
- 2 cups Ghirardelli White candy making and dipping wafers
- Melt Ghirardelli White candy making and dipping wafers using above desired melting directions.
- Add almonds to melted chocolate and stir.
- Spread to desired thickness on waxed paper.
- Cool until hard (approximately 25-35 minutes)
- Break into pieces.
Variations: Substitute cashews for almonds.
Candy Molds
- Ghirardelli White candy making and dipping wafers
- Candy molds
- Melt desired amount of Ghirardelli White candy making and dipping wafers using above desired melting directions.
- Pour melted Ghirardelli White candy making and dipping wafers into clean, dry candy molds (do not grease).
- Tap molds gently to remove any air bubbles in melted chocolate.
- Cool in refrierator for 10-15 minutes, or until hard and pieces easily release from molds.
