1/2 cup canola oil
1/2 cup butter, softened
1 cup brown sugar
1 cup while sugar
1 cup peanut butter
2 eggs
1 tbsp milk
1 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
2 cups flour
1. Preheat oven to 350 degrees.
2. In a mixing bowl, cream together the canola oil, butter, brown sugar, white sugar, and peanut butter.
3. Add eggs, and milk. Blend well.
4. Add baking soda, baking powder, and salt to flour.
5. Add flour mixture, a little at a time, to the sugar/peanut butter mixture. Mix well between additions.
6. Form into 1 tbsp size balls, and place on a greased cookie sheet about 2 inches apart.
7. Press balls with a fork.
8. Bake about 9 minutes.
9. Cookies will be soft when removed from oven, so allow to cool 1 to 2 minutes before removing from cookie sheet.
Makes about 6 dozen cookies.
