Recipe: Ham Pecan Tossed Salad

Quantity 

• 3 cups iceberg lettuce
• 2 cups cubed ham
• 1/4 cup green onion, sliced
• 11 oz. can mandarin oranges, drained
• 1/8 tsp garlic powder
• 1/4 cup diced red peppers
• 1/4 cup sugar
• 3 cups spinach
• 1 cup seedless red grapes, halved
• 1/2 cup carmelized pecan halves

Dressing

• 1/4 cup oil
• 1 tbsp sugar
• 2 tbsp cider vinegar

1. Carmelize pecans by heating 1/4 cup sugar in heavy saucepan until sugar melts.
2. Add pecans and stir until coated.
3. Pour onto waxed paper and cool.
4. Break apart and set aside.
5. Combine lettuce, spinach, ham, onion, garlic powder, peppers, and oranges.
6. Make dressing by whisking all dressing ingredients together and toss with salad.
7. Add reserved pecans right before serving.
