4 chicken breasts
1/4 cup honey
1 cup sliced onion
3/4 cup sliced carrot
3/4 cup sliced celery
1/2 tsp McCormick Ground Black Pepper
1 tsp McCormick Rosemary Leaves
1 tbsp McCormick Parsley Leaves
1 McCormick Bay Leaf
1 14-1/2oz (wgt) can low sodium/low fat chicked broth
1 cup water
1. In a large non-stick pan, combine water, chicken broth, rosemary, bay leaf, parsley, onion, celery, carrot, salt, and pepper. Bring to boil, add chicken breasts and simmer, covered for 30 minutes or until chicken is tender.
2. Remove chicken from broth, and place skin side up in a shallow non-stick baking pan. Add about 1 cup of broth to the pan.
3. Using about 1/2 of the honey, brush honey on each chicken breast. Broil about 4 inches from heat for 2 minutes, then brush with more honey, and broil for another 1 minute. Continue alternately brushing with honey and broiling until chicken is glazed and golden brown.
