Recipe: Hot Cross Buns

Hot Cross Bun Ingredients
- 2 tbsp yeast
- 1/2 cup warm water
- 1/4 cup scalded milk
- 1/2 cup canola oil
- 1/2 cup sugar
- 3/4 tsp salt
- 3 1/2 to 4 cups sifted flour
- 1/2 to 1 tsp ground cinnamon
- 3 beaten eggs
- 2/3 cups currants or chopped raisins
To make Hot Cross Buns
- Soften yeast in warm water.
- Scald milk; Combine scalded milk, canola oil, sugar, and salt; cool to lukewarm.
- Sift together 1 cup flour and cinnamon; stir into milk mixture.
- Add eggs and beat well. Stir in softened yeast and currants.
- Add remaining flour to make a soft dough, beating well.
- Cover with damp cloth and let rise until double (about 1 1/2 hours).
- Punch down dough and turn out on lightly-floured board.
- Cover and let rest 10 minutes.
- Shape into 24 balls.
- Place balls on greased baking sheets; cover with clean cloth and let rise until double.
- Brush tops with egg white.
- Bake Cross Buns at 375° F. for 15 minutes.
- If desired, decorate with traditional cross with a sugar glaze.
Makes 2 dozen Hot Cross Buns.
