6 slices bacon, cut into 1 inch pieces
1 cup sugar
1/2 cup vinegar
2 egg yolks, slightly beaten
1 1/2 lbs shredded cabbage
salt and pepper to taste
- Fry bacon pieces until crisp; remove pieces from pan and set aside. Discard all but 3 tbsps bacon drippings from pan.
- Add sugar and vinegar to bacon drippings and cook until sugar is dissolved.
- Mix a small amount of hot sugar mixture into egg yolks, then slowly add egg yolks to sugar mixture, stirring constantly so as not to curdle the eggs.
- Cook until thick.
- Stir in reserved bacon pieces.
- Pour over shredded cabbage and toss to combine.
- Season with salt and pepper to taste.
- Serve warm.
Good with port or ham.
