Recipe: Irish Freckle Bread

Irish Freckle Bread Ingredients
- 2 tbsp dry yeast
- 1 cup warm potato water
- 1/4 cup lukewarm potato, mashed
- 8 tbsp sugar
- 5 1/2 cups unbleached flour
- 1 tsp sea salt
- 2 eggs
- 1/2 cup butter, melted
- 1 cup raisins
To make Irish Freckle Bread
- Dissolve yeast in lukewarm (85° F.) potato water. Let sit 10 minutes.
- Add mashed potato, 2 tbsp sugar and 1 cup flour. Beat until smooth. Cover; let rise until bubbly, about 1/2 hour.
- Stir down; add remaining sugar, sea salt and 1 cup flour. Beat until smooth.
- Stir in eggs, butter and raisins.
- Stir in enough additional flour to make a soft dough.
- Turn out onto floured surface. Knead until smooth and elastic, about 5 minutes.
- Place in greased bowl, turning to grease top. Cover with damp cloth; let rise in warm draft-free place until doubled in bulk, about 1 hour.
- Punch down the Irish Freckle Bread dough. Divide dough into 2 equal parts. Let rest 5 minutes.
- Shape into 2 loaves. Place in 2 greased 9x5x3” loaf pans. Cover with a damp cloth; let rise until doubled in bulk, about 40 minutes.
- Bake Irish Freckle Bread in a preheated 350° F. oven 45 minutes or until done.
