Irish Freckle Bread Ingredients

To make Irish Freckle Bread

  1. Dissolve yeast in lukewarm (85° F.) potato water. Let sit 10 minutes.
  2. Add mashed potato, 2 tbsp sugar and 1 cup flour. Beat until smooth. Cover; let rise until bubbly, about 1/2 hour.
  3. Stir down; add remaining sugar, sea salt and 1 cup flour. Beat until smooth.
  4. Stir in eggs, butter and raisins.
  5. Stir in enough additional flour to make a soft dough.
  6. Turn out onto floured surface. Knead until smooth and elastic, about 5 minutes.
  7. Place in greased bowl, turning to grease top. Cover with damp cloth; let rise in warm draft-free place until doubled in bulk, about 1 hour.
  8. Punch down the Irish Freckle Bread dough. Divide dough into 2 equal parts. Let rest 5 minutes.
  9. Shape into 2 loaves. Place in 2 greased 9x5x3” loaf pans. Cover with a damp cloth; let rise until doubled in bulk, about 40 minutes.
  10. Bake Irish Freckle Bread in a preheated 350° F. oven 45 minutes or until done.
