Recipe Memphis Smoked Ribs with Chipotle BBQ Sauce

Tender, fall off the bone ribs smoked Memphis style with Lawry's flavor packed Memphis Rub and a sweet, spicy and smoky Chipotle BBQ Sauce will have your customers coming back for seconds.

• 2 racks of pork spare ribs, St. Louis style
• 1 cup Lawry's^® Memphis Style Barbecue Rub

Lawry's Chipotle Memphis Style Barbecue Sauce

• 1/4 cup Lawry's^® Memphis Style Barbecue Rub
• 1 cup apple cider vinegar
• 2 cups dark brown sugar
• 1 cup tomato paste
• 2 tsp chipotle chili powder, ground
• 2 tsp onion, dry granulated
• Hardwood chips, soaked and drained, hickory recommended

1. Coat ribs generously with Lawrys Memphis Style Barbecue Rub and let sit at least 30 minutes.
2. Place hardwood chips in smoke box and preheat smoker to 225°F.
3. Place ribs in smoker and cook 2 hours.
4. Remove smoke box or smoke chips from smoker, but leave heat on, cooking for 2 hours more.
5. Meanwhile, mix the BBQ Sauce ingredients in medium sauce pan, bring to a boil then simmer 5 minutes. Cool to room temperature.
6. To serve: Cut each rack in half. Serve dry with Chipotle BBQ sauce on side.

Chef's Tip: Use this optional Mop Sauce:

1. Mix 2 tablespoons Memphis Style BBQ Rub, 1 cup water, 1 cup Cider Vinegar.
2. Brush ribs with mop everything 30 minutes. This will help keep the ribs moist and flavorful.
