Recipe: Leaf Lettuce Bread

- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/2 cup canola oil
- 1 cup granulated sugar
- 2 eggs
- 1 1/2 tsp grated lemon peel
- 1 cup lightly packed finely chopped green leaf lettuce
- 1/2 cup chopped nuts
- In a small bowl stir togetherthe flour, baking powder, soda, salt, ground ginger, and ground nutmeg.
- In medium-size bowl beat together the canola oil, sugar, eggs and lemon peel until well blended.
- Add flour mixture, mixing until smooth.
- Stir in lettuce and nuts.
- Pour into a greased and floured 4x8" loaf pan.
- Bake in a 350° F. oven until the bread is golden brown on top and a wooden pick inserted in center comes out clean, 50 to 55 minutes.
- Cool in pan on a wire rack about 10 minutes.
- Turn out of pan and continue cooling on rack.
Serve Leaf Lettuce bread lightly warm or cooled. This sweet bread is laced with lettuce; spread slices with cream cheese.
