6 chicken breasts bone in
1 lemon, quartered
1/2 orange, quartered
2 cloves garlic, split
2 whole cloves
1 bay leaf
1/2 cup canola oil
1. Cook lemon, orange, garlic, cloves and bay leaf in canola oil over medium heat in a heavy small saucepan, about 20 mins or until skin of fruit is brown.
2. Pour mixture over chicken breasts and marinate 2 hrs or overnight.
3. Heat large heavy skillet over medium heat.
4. Remove chicken breasts from marinade; reserve marinade.
5. Place chicken breast in hot skillet and cook uncovered over medium heat about 20 mins on each side or until brown and tender.
6. Add reserved marinade, if necessary to prevent chicken from sticking during cooking.
Note: Chicken may also be grilled for approx 45 mins or until cooked through and tender.
