1 whole chicken cut up
1 tsp seasoned salt
1/8 tsp pepper
1/4 cup canola oil
1/2 cup pineapple juice
1/2 cup light corn syrup
2 tsps grated lime rind
3 tbsps lime juice
1/4 tsp dried marjoram or chervil leaves
1. Sprinkle chicken pieces with seasoned salt and pepper.
2. Brown chicken in canola oil, turning chicken pieces as necessary to brown on all sides.
3. Add pineapple juice, corn syrup, lime rind and juice and selected herb.
4. Cover and simmer 45 mins or until chicken is tender, basting several times with pan juices.
5. Remove from pan and garnish with parsley.
