Recipe: Low Sodium Bean Soup

- 1/2 cup sliced carrots
- 1/4 cup sliced celery
- 1/4 cup sliced onion
- 1 clove garlic, minced
- 6 oz medium egg noodles
- 1 tbsp olive oil or canola oil
- 1/3 tsp parsley flakes
- 1 can red kidney or cannelloni beans
- 1/3 of a 8 oz can unsalted tomato sauce
- In a 3 qt pan, put the first 6 ingredients with 1 cup water Smmer for 10 minutes.
- Add 2 1/2 qt water, rinsed beans, and tomato sauce Simmer 20 minutes
- Add noodles and cook 20 minutes or until tender.
Soup will be thick
Soup tastes better if served the following day or divide into portions and freeze.
