Recipe: Mandarin Salad

• 1/4 tsp sea salt
• 2 tbsp sugar
• 1/4 cup canola oil
• Dash Tabasco Sauce
• 2 tbsp vinegar
• Dash white pepper
• 1 tbsp snipped parsley

• 1/4 cup sliced almonds
• 1 tbsp sugar
• 1/2 tbsp butter
• 1/4 head lettuce
• 1/4 head romaine
• 1 cup chopped celery
• 2 green onions with tops, thinly sliced
• 1 can mandarin oranges, drained

1. Cook almonds and 1 tbsp sugar plus1/2 tbsp butter over low heat, stirring constantly until sugar is melted and almonds coated.
2. Cool and break apart. Put in air tight container.
3. In plastic bag, put lettuce pieces, celery, and onion. Fasten and refrigerate.
4. Make dressing by combining sea salt, 2 tbsp sugar, canola oil, Tabasco, vinegar, white pepper, and parsley together and refrigerate.
5. When ready to serve, mix all ingredients together.

Makes 4-6 servings.
