1 frying chicken cut up
1/4 cup canola oil
1 1/2 cups canned tomatoes
3/4 chopped green pepper
1/4 cup chopped onion
3/4 cups rice
1 1/2 cup water
1 tsp chili powder
Breading:
1/4 cup flour
1/2 tsp salt
1 1/2 tsp chili powder
1. Mix the breading ingredients together in a bowl.
2. Wash chicken pieces under cold water and pat dry.
3. Dredge both sides chicken in breading mixture to coat evenly.
4. Saute in oil in large skillet until brown, then turn and brown other side.
5. Combine tomatoes, green pepper, onion, rice, water and chili powder in large bowl, and stir well. Add to skillet.
6. Cover, bring to boil, and simmer about 40 minutes until chicken is tender.
