Recipe: Moros Y Cristianos
Recipes using Tones Whole Bay Leaves

- 2 quarts cold water
- 1 lb black beans
- 1/2 medium green pepper
- 1 medium onion, diced
- 1 tbsp olive oil
- 1 tbsp canola oil
- 1 1/2 medium green peppers, diced
- 4 large cloves garlic, minced
- 1/2 cup very dry white wine
- 1 tbsp sugar
- 1 lg bay leaf, crumbled
- 2 tsp oregano leaves
- Freshly ground black pepper
- Rinse beans and pick out any stones. Soak beans and the 1/2 green pepper in one piece in water for at least 2 hours.
- Bring to a boil and cook 1 to 1 1/2 hours or until beans can be mashed with a fork.
- Discard the cooked green pepper.
- Saute chopped green peppers, onion, and garlic in the oils.
- Add 1 cup of beans which you have mashed with a fork to the mixture and blend.
- Add this to the rest of the beans along with the remaining ingredients.
- Bring to a boil.
- Cover and simmer on very low heat for 1 1/2 to 2 hours.
- Uncover to dry.
Serve over cooked rice or kasha.
