Never Fail Rye Bread
3 cups warm water or save potato water and use
- 1 1/2 cups rye flour
- 4 1/2 tsp dry yeast
- 1 cup white flour
- 1 tbsp salt
- 2 tbsp sugar
- 2 tbsp softened butter
- 3/4 cup sorghum
- 8 cups white flour, more or less
To make Never Fail Rye Bread
- Put yeast in large mixing bowl and add small amount of water to dissolve. Let yeast sit 10 minutes.
- Then add remainder of water and rye and 1 cup white flour.
- Add salt, sugar, and butter. Beat and let stand 1 hour.
- Add sorghum and enough white flour to make a stiff dough. This should be stiffer than for white bread.
- Knead, let rise, punch down and let rise again.
- Make into three 9x5 loaves or four 8x4 smaller loaves and place in greased loaf pans. Cover, and let rise in pans until doubled.
- Bake at 350° F. for 30 minutes.
