To Make New England-Style Clam Chowder

  1. Drain clams and reserve juice.
  2. Dice salt pork and saute.
  3. Remove sauted salt pork pieces; reserve fat.
  4. Combine potatoes, onions, bay leaves and canned clam juice.
  5. Simmer until potatoes are tender.
  6. Remove bay leaves.
  7. Sift flour into reserved fat.
  8. Gradually stir in milk, stirring constantly until well blended.
  9. Simmer until thickened.
  10. Combine clams, reserved clam juice, potatoes, onions, milk mixture, butter and seasonings.
  11. Simmer 3 to 5 minutes.
  12. Serve hot.
