Ingredients in New England-Style Clam Chowder
- 1 can Sea Watch Chopped Sea Clams
- 1 1/2 inch cube salt pork, diced small
- 1 onion, finely chopped
- 2 tablespoons flour
- 3 medium potatoes, peeled and diced
- 3 cups milk for for more creamy chowder use 3 cups half and half
- 3 tablespoons butter
- 2 bay leaves
- salt and freshly ground pepper to taste
To Make New England-Style Clam Chowder
- Drain clams and reserve juice.
- Dice salt pork and saute.
- Remove sauted salt pork pieces; reserve fat.
- Combine potatoes, onions, bay leaves and canned clam juice.
- Simmer until potatoes are tender.
- Remove bay leaves.
- Sift flour into reserved fat.
- Gradually stir in milk, stirring constantly until well blended.
- Simmer until thickened.
- Combine clams, reserved clam juice, potatoes, onions, milk mixture, butter and seasonings.
- Simmer 3 to 5 minutes.
- Serve hot.
