Recipe: Oatmeal Bread

Oatmeal Bread Ingredients
- 1 tbsp dry yeast
- 1/4 cup warm water
- 1/2 cup plus 2 tbsp boiling water
- 1/2 cup rolled oats
- 1/2 cup molasses
- 3 tbsp butter, softened
- 1 1/2 tsp sea salt
- 1 cup flour
- 1 beaten egg
To make Oatmeal Bread
- Soften the yeast in the warm water and let sit for 10 minutes.
- Combine the boiling water, oats, molasses, and butter. Stir in 1 cup flour, then add beaten egg.
- Add yeast mixture.
- Add enough flour to make a soft dough (about 1 1/2 cups). Knead in approximately 1/2 to 3/4 cup more flour. Knead until smooth.
- Place in a lightly greased bowl, turning dough to grease all sides. Cover with a damp cloth and let rise until doubled (about 1 1/2 hours). Punch down.
- Coat a well greased 9x5 bread pan with 2 tbsp rolled oats.
- Shape loaf and place in pan. Brush with mixture of 1 egg white and 1 tbsp water.
- Sprinkle top of Oatmeal Bread with rolled oats.
- Bake at 375° F. for 40 minutes.
Makes 1 loaf of Oatmeal Bread.
