Old World Black Bread Ingredients
- 3 3/4 cup rye flour
- 3 3/4 cup white flour
- 2 package dry yeast
- 1/2 cup water, warm
- 1/2 cup unsweetened cocoa
- 1/4 cup sugar
- 2 tbsp caraway seed
- 2 tsp salt
- 2 tsp instant coffee crystals
- 1/4 cup dark corn syrup
- 1/4 cup butter
To make Old World Black Bread
- Mix the rye and white flour together in large bowl, reserve 3 cups of this.
- Sprinkle the yeast over the warm water and stir until dissolved.
- Stir the reserved 3 cups flour in with the cocoa powder, sugar, caraway, salt, and instant coffee.
- In medium saucepan heat 2 cups water, vinegar, corn syrup, and butter over low heat, until just warm (just until butter softens). Add flour and cocoa powder mixture and blend well.
- Add the yeast to this mixture, combine in heavy mixer, stir in rest of flour 1 cup at a time until dough doesn’t cling.
- Let dough rest 10 minutes then knead dough for 15 minutes.
- Grease bowl and dough, cover and let rise 1 hour or double. Punch down, cut in half to make into 2 loaves. Form the Black Bread Dough, and place each half into a greased loaf pan. Cover the pans, and let rise again until double.
- Bake at 375° F. for about 40 minutes.
