1/2 cup peanut butter
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 1/4 cups unbleached all purpose flour
3/4 tsp baking powder
1/4 tsp salt.
Strawberry preserves
1. Preheat oven to 350 degrees.
2. Cream butter, peanut butter, white sugar, and brown sugar together.
3. Stir in egg.
4. Blend flour, baking powder, and salt together. Then add, a little at a time, to the creamed butter/sugar mix. Mix well between additions.
5. Drop by the spoonfull onto a greased baking sheet.
6. Press cookie dough flat with the back of a tablespoon.
7. Make a small depression in top of cookie, and fill with strawberry preserves,
8. Bake 12-15 minutes until slightly brown.
Makes about 40 cookies.
