Crust
2 cups graham cracker crumbs
1/2 cup sugar
1/2 cup butter, melted
Filling and Topping
2 eggs
2 (8-oz) pkg cream cheese, softened
1/2 cup plus 2 tbsp sugar
2 tsp vanilla extract
1/2 cup drained crushed pineapple
2 tbsp flour
1 cup sour cream
Crust: Mix graham chracker crumbs, sugar, and butter. Press into bottom and sides of 9" spring pan.
Filling: Cream cheese until smooth. Beat eggs slightly with 1/2 cup sugar. Add pineapple, flour, and 1 teaspoon vanilla. Blend cream cheese and egg mixture. Pour into crust and bake in 375° F oven for 20 minutes. Remove from oven and let stand 15 minutes.
Topping: Combine sour cream, vanilla extract, and 2 tablespoons sugar. Spread on filling and bake in hot oven (425° F) 10 minutes more. Cool and chill overnight before serving.
