Pioneer Bread Ingredients

To make Pioneer Bread

  1. Dissolve yeast in warm water in a large bowl. Let sit 10 minutes to activate.
  2. Add sugar, salt, egg, butter, corn meal and 1 cup of the flour. Mix well.
  3. Stir in enough of remaining flour to make Pioneer Bread dough easy to handle.
  4. Knead until smooth and elastic, about 5 minutes.
  5. Place the Pioneer Bread dough in a greased bowl, turning once to grease the top.
  6. Cover bowl with a damp cloth and let rise in a warm place, for about 1 1/2 hours.
  7. Punch down dough. Form dough into loaf and place in a greased 9x5 loaf pan. Brush top lightly with butter. Sprinkle with corn meal.
  8. Cover with a damp cloth, and let rise until double in bulk, about an hour.
  9. Preheat oven to 400° F. Bake until loaf sounds hollow when tapped, about 25 to 30 minutes.
  10. Remove Pioneer Bread from pan, and cool on wire rack.

Makes 1 loaf of Pioneer Bread.
