Recipe: Pioneer Bread

Pioneer Bread Ingredients
- 2 1/4 tsp active /dry yeast
- 3/4 cup warm water
- 3 tbsp sugar
- 2 tsp salt
- 1 egg
- 3 tbsp butter, softened
- 1/2 cup yellow corn meal
- 2 to 2 1/2 cups unbleached flour
To make Pioneer Bread
- Dissolve yeast in warm water in a large bowl. Let sit 10 minutes to activate.
- Add sugar, salt, egg, butter, corn meal and 1 cup of the flour. Mix well.
- Stir in enough of remaining flour to make Pioneer Bread dough easy to handle.
- Knead until smooth and elastic, about 5 minutes.
- Place the Pioneer Bread dough in a greased bowl, turning once to grease the top.
- Cover bowl with a damp cloth and let rise in a warm place, for about 1 1/2 hours.
- Punch down dough. Form dough into loaf and place in a greased 9x5 loaf pan. Brush top lightly with butter. Sprinkle with corn meal.
- Cover with a damp cloth, and let rise until double in bulk, about an hour.
- Preheat oven to 400° F. Bake until loaf sounds hollow when tapped, about 25 to 30 minutes.
- Remove Pioneer Bread from pan, and cool on wire rack.
Makes 1 loaf of Pioneer Bread.
