Poppy Seed Cake Ingredients
- 3/4 cup poppy seeds
- 3/4 cup milk
- 3/4 cup sugar
- 3/4 cup butter
- 2 cups flour
- 2 tsp baking powder
- 1 tsp vanilla
- 4 egg whites
Poppy Seed Cake Filling ingredients:
- 2 cups milk
- 1 cup granulated sugar
- 4 egg yolks
- 3 tbsp cornstarch
- 1 cup chopped walnuts
Icing for Poppy Seed Cake Ingredients:
- 1/2 cup butter
- 1 1/2 cup powdered sugar
- 2 tbsp cocoa powder
- Cold prepared coffee
To make Poppy Seed Cake
- Soak poppy seeds in milk for 5 to 6 hours.
- Cream sugar and butter; add poppy seeds.
- Sift flour and baking powder together then add to above mixture.
- Add vanilla. Beat egg whites until stiff and fold in.
- Bake in three 9" round layercake pans at 375° F. for about 20 minutes. Do not over bake.
- Put layers together with filling and then ice top and sides with icing. Poppy Seed Cake can season for a day or be frozen or eaten.
To make the Poppy Seed Cake Filling
- Mix dry ingredients; add egg yolks.
- Stir into milk in double boiler. Cook filling until thick.
- Cool and add chopped walnuts.
- Spread filling between layers of the Poppy Seed Cake.
To make Poppy Seed Cake Icing
- Soften butter; blend into powdered sugar and cocoa.
- Moisten with enough cold coffee to spread.
- Ice top and sides of the Poppy Seed Cake.
