Recipe: Poppy Seed Fruit Salad

Poppy Seed Dressing:

• 1/4 cup sugar
• 2 tbsp honey
• 1 tsp poppy seeds
• 1/2 tsp grated onion
• 1/4 tsp dry mustard
• 3 tbsp cider vinegar
• 1 1/2 tbsp lemon juice
• 1/2 cup canola oil

• 10 oz can chilled mandarin orange sections, drained
• 2 medium kiwi fruit, peeled and sliced
• 3/4 cup toasted walnuts
• 6 cups mixed salad greens

Poppy Seed Dressings:

1. In a 2 cup pyrex measuring cup stir together the honey, sugar, poppy seeds, onion, mustard, vinegar, and lemon juice.
2. Add canola oil, and mix well.

Fruit Salad

1. Reserve 6 each of the orange sections, kiwi and walnut halves for use a garnish.
2. Place the salad greens in a salad bowl. Add the fruit and nuts and mix together.
3. Drizzle the Poppy Seed Dressing over the top of the fruit and salad greens; Toss gently.
4. Arrange the Fruit Salad on individual salad plates.
5. Garnish each plate with a mandarin orange slice, kiwi and a walnut half.
