Preheat oven to 350° F.
Mix the sugar, canola oil, flour, salt, cinnamon, nutmeg, ginger and pumpkin together in a large bowl.
Sift the flour and baking soda together. Add slowly to the pumpkin mixture.
Add walnuts; gently mix well.
Bake in 3 well-greased bread tins for 1 hour at 350° F.
Cool Pumpkin Bread on wire racks and serve with cream cheese.
