Recipe: Pumpkin Bars

Pumpkin Bar Ingredients
- 4 eggs
- 1 2/3 cups granulated sugar
- 1 cup canola oil
- 16 ounce can pumpkin (or mincemeat)
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 tsp baking soda
Icing
- 3 ounce package cream cheese, softened
- 1/2 cup butter, softened
- 1 tsp vanilla extract
- 2 cups sifted powdered sugar
- chopped walnuts for garnish
- In mixer bowl, beat together eggs, granulated sugar, oil, and pumpkin until light and fluffy.
- Stir together flour, baking powder, cinnamon, salt, and soda.
- Add to pumpkin mixture and mix thoroughly.
- Spread batter in ungreased 15" x 10" x 1" baking pan.
- Bake in 350° F oven for 25 to 30 minutes.
- Remove from oven and cool.
- Frost with cream cheese icing.
- Sprinkle with chopped walnuts.
- Cut into bars.
Makes about 2 dozen Pumpkin Bars.
Cream Cheese Icing:
- Cream together creamcheese and butter.
- Stir in vanilla extract.
- Add powdered sugar, a little at a time, beating well, until mixture is smooth and creamy.
