Recipe: Pumpkin Pie Squares

Ingredients in Pumpkin Pie Squares
- 1 cup flour (sifted)
- 1/2 cup quick rolled oats
- 1/2 cup brown sugar (packed)
- 1/2 cup butter
- 2 cups canned pumpkin
- 1 can evaporated milk
- 2 eggs
- 3/4 cup sugar
- 1/2 tsp salt
- 1/4 tsp ground cloves
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 cup pecans (chopped)
- 1/2 cup brown sugar
- 2 tbsp butter or margarine
To make Pumpkin Pie Squares
- Preheat oven to 350 degrees.
- Combine flour, oats, brown sugar and butter in a mixing bowl.
- Mix until crumbly using electric mixer on low speed.
- Press into an ungreased 9 x 13 inch baking pan.
- Bake for 20 minutes at 350° F.
- Combine pumpkin, evaporated milk, eggs, sugar, salt and spices.
- Beat well.
- Pour into crust.
- Bake at 350° F for 20 minutes.
- Combine pecans, brown sugar and butter.
- Sprinkle over pumpkin filling.
- Bake for another 15-20 minutes or until filling is set.
- Cool in pan.
- Cut in 2 inch squares.
Recipe makes about 2 dozen servings of Pumpkin Pie Squares.
