Pumpkin Puff Ingredients

• 6 cups sweet potatoes (vacuum pack; no sugar)
• 1 cup sugar
• 1/2 cup margarine
• 1/2 tsp pure vanilla extract
• 1/8 tsp ground nutmeg
• 3 eggs (separated)

1. Preheat oven to 400° F.
2. Whip well, all but egg whites.
3. Beat the egg whites stiff.
4. Fold egg whites into potatoe mixture.
5. Place mixture in buttered casserole.
6. Bake until light brown or about 30 minutes.
7. Freezes very well.
