• 8 slices bacon
• 1 medium onion, chopped
• 1/2 cup dried sliced mushrooms
• 3 eggs
• 1 1/2 cups milk
• 1 tbsp flour
• 1 tsp salt
• 1/8 tsp nutmeg
• 1 1/2 cups shredded Swiss cheese
• 1 cup cubed cooked ham
• 2 9 inch frozen pie shells

Preheat oven to 375 degrees.
1. Pan fry bacon until crisp, drain bacon and break in half.
2. Drain all but 3 tbsps drippings from pan.
3. Saute onions and mushrooms in drippings until tender but not brown.
4. Combine eggs, milk, flour, salt and nutmeg in bowl and beat slightly.
5. Alternate layers of bacon, mushrooms, onion mixture, cheese and ham in pie shells.
6. Pour egg mixture over layers.
7. Sprinkle with a little more nutmeg.
8. Bake 35 to 40 minutes or until knife inserted in center comes out clean.

Excellent reheated.
