- 1 lb lean ground beef
- 3 1/2 cups canned tomatoes
- 1 cup chopped green pepper
- 1/2 cup uncooked rice
- 1/2 cup chopped onion

- Brown ground beef; drain off fat.
- Add remaining ingredients.
- Cover and simmer 25 minutes
- Top with slices of cheese and heat until the cheese melts.
