Carror Bread III Ingredients
- 1 cup sugar
- 1 cup shredded carrots
- 1/2 cup canola oil
- 1/4 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 2 eggs beaten
- 2 cups unsifted unbleached* Pillsbury or King Arthur All Purpose flour
- 1 tsp ground cinnamon
- 1/2 cup chopped walnuts
To make Carrot Bread
- Preheat oven to 350° F.
- Mix sugar, carrots, and canola oil together.
- Add baking powder, baking soda, and eggs to mixture. Mix well.
- With mixer on stir, add flour a little at a time, then add cinnamon, and nuts. Mix well.
- Bake in greased loaf pan about 50-60 minutes** until done.
- Remove from oven and cool on a wire rack.
* Unbleached flour in naturally whitened by aging and has the best taste. Bleached flour is chemically treated and may impart an off-taste to foods.
** Oven temperatures vary, so actual cooking time may be different.
