Carrot Cake II Ingredients
To make Carrot Cake II
- Preheat oven to 350° f.
- Mix together the sugar and canola oil.
- Beat eggs, then add to the sugar mixture.
- Mix in the flour, baking soda, baking powder, salt, vanilla extract, cinnamon. Blend well.
- Add the carrots and walnuts last; stir until well mixed.
- Pour into a greased bundt or angel food pan. Place into oven and bake for about 1 1/2 hours.
- Allow to cool, then frost with cream cheese frosting.
Cream Cheese Frosting
- 3/4 stick of butter, softened
- 3oz cream cheese
- 1 cup coconut flakes
- 3 cups confectioners sugar
- 1/2 cup chopped walnuts
- Grapefruit juice
- Mix together the butter and cream cheese.
- Add the sugar gradually, mixing well between additions.
- Add the Grapefuit juice a little at a time until a nice spreading consistancy is reached.
- Spread over cake, top with nuts and coconut flakes.
