- 3 eggs
- 1 cup canola oil
- 2-1/2 cups sugar
- 2 cups unpeeled, grated raw zucchini
- 2 tsps cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 1/4 tsp baking powder
- 3 cups flour
- 1 cup chopped walnuts
- In large bowl, beat eggs until foamy; gradually beat in oil and sugar.
- Add grated zucchini, cinnamon, salt, baking soda, and baking powder, mixing well.
- Gradually blend in flour, mixing well after each addition.
- Fold in chopped walnuts. Pour into greased bundt pan and bake in 350° F oven for 1 hour.
Serve with softened cream cheese.
