Recipe: Zucchini Cake
Recipes using Diamond Shelled Walnuts

- 3 cups grated zucchini
- 2 cups honey
- 1 cup canola oil
- 4 eggs
- 3 cups flour
- 1-1/2 tsp ground cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chopped walnuts
Frosting
- 1 3-oz pkg cream cheese
- 1/4 cup soft butter
- 2 cups powdered sugar
- 1 tsp vanilla extract
To make Zucchini Cake:
- Mix zucchini, honey, oil, and eggs.
- Combine dry ingredients: flour, cinnamon, baking powder, baking soda, and salt.
- Stir with fork until everything is evenly distributed.
- Incorporate flour mixture into zucchini mixture slowly - a little bit at a time.
- Put walnuts in last.
- Bake at 325° F for 1 hour in 10" x 13" pan.
While cake is baking prepare frosting:
- Beat cream cheese and butter with beaters till smooth.
- Slowly add sugar, beating continually.
- Add vanilla last.
